Vanilla is not always a bad word…
Vanilla by name, vanilla by nature (the cake, not me).
Anyone who knows me will know I am literally podcast obsessed. I often listen from the moment I wake to the moment I go to bed. After being a self declared “clean eater” (cringe), my excessive podcast listening has given me a more balanced approach to eating. UPFs are a thumbs down, home made or at least food with recognisable ingredients is in. Enter my sister in shock that I made proper buttercream icing (I was shocked too how good it looked). November is three Birthdays in our house so this has been on repeat….
Cake
150g butter
150g self raising flour
150g coconut sugar
3 eggs
2 teaspoons vanilla
Buttercream
90g butter at room temp
200g icing sugar
1 tspn vanilla
1 dessert spoon of water
METHOD - CAKE
Butter, coconut sugar & vanilla in the Thermomix for 40 seconds at 50 degrees on speed 3-4
Throw in eggs & flour
Tip into a lined Cake tin (I used a 20cm round)
Set the timer for 35 minutes
METHOD - ICING
Throw icing sugar, butter & vanilla in the thermo
Speed 4 / 20 seconds
Pop in a bowl - I tend to put in the fridge
