Alice has worked in hospitality since 1999, starting off in two small boutique Hotels in Darlinghurst. From there she had the opportunity of a lifetime, moving to London & working for the aptly named “The Ultimate Experience”. From there she returned to Sydney & for the last 20 years has worked with a number of well known brands including Coogee Bay Hotel, CYCA, The Boulevard Hotel, Pacific Restaurant Group (including Kingsleys Woolloomooloo & playing a formative part of the openings for Kingsleys Brisbane, Kingsleys Canberra, Chophouse on Bligh St & Kingsleys Melbourne), Longrain, China Diner, The London Paddo & Watershed Darling Harbour.

In 2010-2011 she ran the back of house for the opening of Smith’s on Bayswater in the iconic Bayswater Brasserie site.

From 2012-2016, Alice worked at Longrain, in an Office based role, specifically managing the transition from a Paper Diary system to an online reservation system, then managing all Function coordination & Reservations. She was also involved in the opening of Subcontinental Restaurant in what was Longrain Bunker Bar.

From 2016-2020, Alice worked with China Diner Bondi - managing the marketing handover when ownership changed hands, set up China Diner Double Bay including Menu design, collateral design, setting up phone system & ensuring the brand aesthetic was maintained across a new venue. During this period Alice also was formative in the opening of East London upstairs at the London Hotel Paddo. Throughout this period Alice managed reservations & functions for all 3 venues.

Early in 2021, Alice pivoted, ready for a new challenge - she moved to The Watershed Hotel & Cohibar Cocktail & Cigar Bar in Darling Harbour. The first project was implementing a new Reservation System, new Function processes & initial set up of Order at Table. During 2021, the Group took over the Catering Arm of the Willoughby Park Bowling Club. Alice was pivotal in creating the name of the new venue, assisting in the website build process, creating all collateral, Menu design, setting up Open Table & coordinating all Functions.

Alice’s strengths lie in Marketing, Branding, Functions, Reservations & back of house systems. She has been involved in at least eight venue openings. Her experience is predominately in premium casual restaurants, pubs & also has experience across two hotel brands.
