Simple vanilla Cheesecake

I accidentally made this after my eldest son discovered cheesecake in the summer holidays. I’m all for treats, but more so when I’ve made them myself & know exactly what went into it. I’m done with huge cakes so tend to make it a lower profile so they aren’t eating a 15cm high piece of cake.

CHEESECAKE INGREDIENTS

250g block cream cheese
130g caster sugar (I know I know, you’re shook I used the “s word” - I had some leftover from late last year & didn’t want to waste it).
75g cottage cheese (can you count this as protein gainzzzzz if it’s in a cake?)
2 eggs
15g plain flour
2 teaspoons Vanilla

BASE

200g biscuit of choice
60g butter

CHEESECAKE METHOD

  1. Throw in Thermomix: 150g biscuits + 60g butter - speed 5 / 10 seconds

  2. Tip out onto a piece of baking paper in a round tin

  3. Blend 250g cream cheese + 75g cottage cheese + vanilla - speed 5 / 10 seconds

  4. Throw in the sugar & flour - speed 4 / 5 seconds.

  5. Throw in eggs - speed 4 / 5 seconds

  6. Put in the oven for 50 minutes.

  7. Refrigerate for 2 hours.
