Thermomix oat choc chip lunchbox cookies

Oats are a staple in my kitchen - at this time of year a Three Bears style breakfast is off the table (both literally & proverbially), so it’s time for yet another lunchbox snack to crowd out the UPFs (Ultra Processed Foods)….

OAT CHOC CHIP COOKIE INGREDIENTS

120g butter
120g plain flour
100g oats
60g coconut sugar

1 egg
50g choc chips
30g maple Syrup

OAT CHOC CHIP COOKIE METHOD

  1. Turn the oven on at 190 degrees Celsius.

  2. Put butter & coconut sugar in the thermomix at 70 degrees for 2 minutes/speed 3

  3. Throw in remaining ingredients. REVERSE 10 seconds/speed 4.

  4. Scoop onto baking paper - I use 2 dessert spoons for size (they weigh approx 30-35g each if you want to get technical!)

  5. Throw on a timer for 12 minutes. Check & continue cooking to your preferred texture
